Add the chicken breasts, cover tightly with plastic wrap, and refrigerate for at least 2 hours or up to 24 hours. A coating of crushed corn flakes (surprise, no breadcrumbs) makes the baked fried chicken exterior irresistibly crunchy. In a large bowl, stir together the buttermilk and hot sauce. Add the reserved bacon drippings to the clean pan and enough vegetable oil to cover the chicken by half. Dredge in flour mixture and tap off excess. It could also be as sophisticated as imagination allows. Slice each chicken breast in half lengthwise and pound to about 3/4 inch thick.
